HEALTHY SNACK: OVEN BAKED BEET CHIPS

When it comes to eating healthy, many people will say snacking is their downfall. Make lots of these delicious chips and have them handy for when the urge for a crunchy, salty snack hits.
Ingredients:
  • 6 small raw beets, peeled and trimmed
  • Olive oil
  • Sea salt
Instructions:
  1. Clean and slice beets.
  2. Preheat oven to 200°F.
  3. Line baking sheets with parchment paper.
  4. Place thinly sliced beets in a single layer on the baking sheets, drizzle with oil and sprinkle with sea salt.
  5. Bake at 200 degrees for 1.5 hours.
  6. Rotate pans from top to bottom racks (if using multiple sheets) and bake for an additional 1.5 hours.
  7. Let cool for 30 minutes and serve.

QUICK & EASY: ROASTED BEETROOTS

Roasting beets is a great way to bring out their flavor. Try this beet recipe for a healthy side dish.
Ingredients:
  • 3 large raw beetroots, peeled and trimmed
  • Olive oil
  • Sea salt
  • Black pepper
  • White vinegar
  • ½ cup orange juice
Instructions:
  1. Preheat the oven to 400 degrees.
  2. Clean and peel beets and cut into one-inch chunks.
  3. Line a baking sheet with parchment paper.
  4. Place cut beets on the baking sheets and drizzle with olive oil. Season the beets with sea salt and pepper.
  5. Roast in oven for 35 to 45 minutes, turning over the beets every 15 minutes with a spatula.
  6. Remove from the oven and place in a bowl, then toss with vinegar and orange juice.

  1. Cut beetroots into small chunks and add to bowl.

SUPER SIDE DISH: PICKLED BEETS

This lightly pickled beet recipe is great to keep around as a side dish or to add to salads and burgers.
Ingredients:
  • 1 lb. small beetroots
  • 1/2 cup white vinegar
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon dill
  • 2 bay leaves
Instructions:
  1. Wash and skin beetroots and place in a medium saucepan.
  2. Cover with water and bring to a boil over high heat.
  3. Reduce heat, cover and let simmer for 45 minutes.
  4. Drain and rinse beets in cold water. Slice thinly and place in a bowl.
  5. Combine vinegar and sugar in a small saucepan. Bring to a boil and let cook for 5 minutes.
  6. Remove from heat.
  7. Stir salt, dill and bay leaves into vinegar mixture.
  8. Pour vinegar mixture over beets, then cover and chill.
  9. Discard bay leaves and pour into mason jars.
  10. Chill for 20 minutes, then serve.
