There are lots of reasons for being a vegan. Maybe it makes your body feel better. Or perhaps you don’t approve of killing and eating fellow Earth-creatures.
But vegan or not, sometimes a guy just has to have a “burger.” Or a slice of “bacon.” Or some “BBQ.” Meat substitutes have been around forever, but, well, most of them are still “substitutes.”
Pulled Pork, Shredded Chicken
Meet the Jackfruit. Native to Southeast Asia, a mature jackfruit can weigh close to 100 pounds; it is, in fact, the world’s largest fruit. Cut through its spiky exterior and you’ll find a mild-flavored, nutrient-dense, plant-based substance that makes a perfectly convincing meat substitute. According to Upton’s Naturals, the first company to make pre-seasoned, heat-and-serve, natural jackfruit available in the U.S. market, when it’s cooked up young and seasoned properly, this tropical fruit has the delectable texture and taste of pulled pork or shredded chicken.
Jackfruit is just the latest breakthrough product from Upton’s Naturals. Based in Chicago, Upton’s Naturals is an independently-owned natural foods company that focuses on meat alternatives and vegan values.
Starting in 2006, Dan Staackmann, the company’s founder, began using flavored, wheat-based seitan to prepare a line of products that’s sold in stores across the country. Stores like Whole Foods. Currently, Staackmann is launching the first-to-market, seasoned and ready-to-eat jackfruit products in the United States.
The Weirdo
Staackmann has been a vegan since he was 15. “I grew up on your standard American diet,” he explains. “Pepperoni pizza, and half gallons of ice cream served for dessert. Then, when I was 15, I just had a wake-up call and knew that was not for me. Really, it shouldn’t be for anybody.”
Staackmann became a vegan to respect animal rights and environmental issues more than for health reasons. For the first 15 years he was an outcast. “You’re the weirdo,” he laughs. “You’re the one who goes to family dinners and gets picked on…”
Nonetheless, Staackmann stuck to his guns. He started an organic horticulture business, but it didn’t work out. He paid the bills by buying and selling high-design furniture via auction.
Meanwhile, Staackmann found himself becoming increasingly passionate about veganism, and he wanted to do something in food. Seitan [pronounced say-tan, or sigh-tan] was one of his favorite meat substitutes, but at the time there were no local producers in Chicago. In fact the only place you could get it was at restaurants, where the line cooks made it themselves. Staackmann saw a business opportunity that fit perfectly with his vegan values.
Most meat-analogues are made from soy. Tempeh is fermented soy. Tofu is coagulated soy milk. Seitan, on the other hand, is made by rinsing all the starch out of wheat flour, so what you have left is quite meat-like in texture. “Sometimes seitan can be a little spongy,” says Staackmann. “Ours is firm, with a little more ‘tooth’ and 'chew.’” Also, compared to soy products, seitan is not highly processed.
“It’s got a neutral flavor,” Staackmann explains. “We make traditional seitan, flavored with garlic and soy sauce, but we also have five other flavors that are quite unique. We’ve got bacon. We’ve got chorizo you can use for tacos or nachos. We’ve got Italian, which is like Italian sausage and goes great in pizza or pasta.”
According to Staackmann you can use seitan in any recipe that calls for meat. “It’s like chicken chunks. You can put it in stir fries. Salads. Wraps.”
Whole Foods Was Easy
Staackmann steered clear of retail marketing while he built the business; he sold his seitan directly to a handful of Chicago restaurants. People loved it! So he saved up some money, opened a home equity line of credit (back when it was probably too easy to do that) and bought some retail packaging equipment.
As it turns out, getting the packaged Naturals into Whole Foods was easy.
“I just walked into the store,” Staackmann remembers. “I knew there was one grocery buyer who was a vegan, so I said, 'I’ve got this product we’ve been selling to restaurants, and would you be interested?’ And he said, 'Of course!’”
Whole Foods gave Staackmann a shot in seven Chicago stores. Then he hooked up with a local distributor that serviced 20 Whole Foods stores in the greater Chicago area. Once Whole Foods saw that sales of Upton’s products were doing well, they offered him shelf space across the entire region, which at the time was 40 stores.
“In every market,” says Staackmann, “you need an anchor like Whole Foods to activate the distribution, because no distributor is gonna take your product unless they’ve got at least ten, 20 stores they know they can sell it to. And that’s pretty much how we did it, step by step, region by region.”
Bribe Some Forest Rangers
In 2010, Staackmann ate a Nepalese jackfruit curry – and fell in love. At the time you could only find jackfruit in Asian specialty stores, in 20-oz. cans full of preservatives. Worse yet, once you got the can home it took one to three hours to cook down into something you would eat. Staackmann wondered how hard it would be to bring a jackfruit product to market that was pre-seasoned, pre-cooked, and ready to eat. No one else was doing that. It didn’t hurt that jackfruit is also gluten-free, oil-free and soy-free.
Staackmann searched for a long time to find a supplier that could provide enough product for the U.S. market. “It took getting on a plane and flying all over India and Southeast Asia,” he says. “They’d say things to me like, 'We might need to bribe some forest rangers to go in and get the jackfruit 'cause it’s growing on private landowners’ property…’ That didn’t sound promising.”
Eventually he hooked up with a reliable supplier in Thailand, and jackfruits started rolling toward Upton’s production line – just in time for a sudden explosion of interest in the stuff. Once again, Staackmann and Upton’s Naturals were in just the right place at just the right time.
No One’s Laughing Now
Upton sells 11 products: six seitans, four jackfruits, and a burger that just launched in March. The products aren’t hard to find, either. Upton’s biggest national distributor is still Whole Foods, but that’s just the beginning. Vitamin Cottage Natural Grocers is another large one. Also Wegmans. Staackmann still sells to lots of independent natural grocery stores and co-ops. Finally, the Breakroom is a small restaurant in Upton’s factory building in Chicago.
The world has changed in recent years for Staackmann’s “weirdo” food business. Would-be investors call on the phone, and pester the staff at trade shows. He probably gets two investor emails a week. “At Natural Products Expo West there were 15 to 20 investment groups trying to get me to schedule meetings,” he laughs. “But I’m still the sole owner, and I’ve self-financed everything, so it’s a little difficult for me to let go. Not that I’d sign over any kind of majority share.
"But man, what a change! When I was starting out, I’d go to a bank and tell them I’ve got this idea, and we’ve got these sales, and when I’d ask for a loan they’d laugh me out of the office.”

Ryan Senser is currently the starting long snapper for the Florida Tuskers of the United Football League. Previously, he has had stints as a long snapper in the NFL, with the New Orleans Saints (2008) and the Seattle Seahawks (2008-2009). After beginning his Division 1 collegiate career with Arizona State University, he transferred to Ohio University, where he started for three consecutive seasons (2005-2007) as the Bobcat’s long snapper.
Michael Braunstein currently owns and operates the company, “Kick on 4th Down,” that offers instruction in kicking fundamentals and techniques to coaches and athletes at all competitive, skill, and interest levels. A 2007 graduate of Ohio University, where he was a first team All-MAC selection as a kicker during his senior year, as well as a semifinalist for the coveted Lou Groza Award, Braunstein is one of the most respected kicking instructors in the nation.

God and Love! God's Love Is Gospel Truth Because "God Is Love." Love Creates An Encounter With God

With all the sin and wrong in the
world, we often struggle with the concept of the love of God. How can
God love human beings who engage in so much sin and compromise? But the
gospel truth is the fact that God loves us so much that he sacrificed
his only Son so that we might enjoy continual relationship, fellowship
and connection with him. God and love go together like a hand in a
glove. This is often hard to see in the Old Testament especially,
because of all the killing and dying and plagues. God was even
personally responsible for some of these!!! But even here, the message
was one of God's love. Why? He was pursuing and protecting his covenant
people which was Israel, as well as protecting the 'seed' to come, who
was Jesus (Gal 3:16, 19). Satan was doing his best, and using other
nations, to try to stop the coming seed " Jesus. God's Love Is the Gospel Truth Because God is Love This
is what I John 4:8 says, and also I John 4:16 says. Love is God's
nature. Therefore, everything he does is out of love. It doesn't always
seem this way to us because bad things and bad problems happen to all of
us (John 16:33). We think God causes these bad things to happen, but he
does not. Because of human free will, and the fallen state of
man, and a curse being placed on the earth because of the fall, he does
allow bad things to happen. He doesn't stop the boys who entered
Columbine High School with guns and killed so many people. This was very
close to where I live " plus it happened on my brother Tim's birthday:
April 20th, in 1999. There have been many equally bad situations since
then. The Fact Is that God IS Love Love is not simply a
characteristic God has. Instead, it's who he IS. He must love because he
IS love. If he did not love, he would be contrary to his own identity.
And In Ephesians we are told that we stand before God in love (Eph 1:4). To
entertain and receive the gospel truth that God loves us
'unconditionally,' as the Bible says, is perhaps the hardest thing for
us to believe. This is because we don't love others this way. We love
based on conditions: "If you do what I want then I will love you more."
But this is not God's love. This is human love. Receive the truth that
God is in love with you. It's the greatest revelation you can live with
daily. God Loves Us Unconditionally and Forever This means
that God's love does not depend on what I do, or what I don't do. If I
do good, God loves me, and if I do bad, God still loves me. He doesn't
like what I do (my performance), but he does love me (my person). This
is always true if I am in Jesus. If you are not in Jesus, God still
loves you the same way, but he is trying to draw you into his love. If
you're not in Jesus you can never begin to experience God's love
personally. It's hard enough to when you are in Jesus. God Loves Us As Much As He Does Jesus This
exactly what the gospel truth says in John 17:23. This is a real
mind-blower. Paul says we should be 'rooted and grounded in the love of
God.' The whole New Testament is a revelation of God's love for us (I
John 4:10, 19). We must learn to believe and receive God's love
for us or nothing else will make much sense for us in the Bible. You
see, the Bible must be accepted in faith, and it is God's love that
generates faith in us (Gal 5:6). Without love, faith is hard to come by.
This is especially true if we live by God's Old Testament law, because
the law voids our faith and makes it inoperable (Rom 4:14). Love and
faith are linked intimately. You can't have one with the other, and both
are the GIFT of God. Neither can be earned or deserved. The
first step to receiving God's love is to forget about our human nature
and human love. Our love is conditional, as I said. God's love is
unconditional as far as we are concerned, because it's all based in
Jesus " because of his death on the cross. Next time I'll tell
you about a legal client I had who taught me more about God's love "
before I ever really knew it existed " than anything I could imagine. Love Cannot Begin in Us " It Must Begin in God The
truth is love cannot begin in us. Most preachers preach that love
begins in us, but this is wrong: "Love God with all your mind, soul,
heart and strength " and then love others as yourself." Jesus does say
this (Matt 22:38-40). But he was preaching the law. In fact, he was
responding to a trick question, from a lawyer, about the law. Jesus
says he gave us a NEW command: To love others AS he loves us. Without
us truly experiencing the love of God, we can't love others the way we
should. Love must begin with God (I John 4:10). Paul gives a
beautiful picture of how love works: "The Lord make you increase and
abound in love one toward another" (I Thes 3:12). Note three things: God
initiates it, we increase in it personally, and then we abound over
toward others. It is God's agape love at work from him through us. It is not human love at all.

Too often we allow the busyness of life and all our responsibilities to
overwhelm and overtake us. I encourage you to not be busy, but to be

Do you know that God loves you so much that at times He'll
hide you? He'll cause you to be overlooked. He'll cause doors to shut.
He'll cause a promotion to go to your coworker. You can be talented and
hidden, anointed and hidden, have great ideas and hidden. If you don't
understand that it's God hiding you, you'll be frustrated and try to
make things happen on your own. Before you see acclaim, you'll go
through a season of obscurity. You have to pass the test when you're
being hidden.
We all have times when we're praying, but our prayers aren't being
answered. We're being our best, but not getting good breaks, the problem
is not turning around. It seems as though God is on vacation. But the
silence is not a sign that God is not working. He may not be changing
the circumstances, but He is changing us. God uses the seasons of
silence to get us prepared. Your character is being developed. You're
gaining experience, maturity and strength that you'll need for where God
is taking you.
As many of you know my daughter has Rheumatoid arthritis and has a compromised immune system. After a over seas trip she got very sick, after a short hospital stay, many tests and feeling more and more sick she tested positive for ESBL Extended Spectrum Beta Lactamase. ..Add to that she ended up with Pneumonia, she was really sick, not eating much and so weak she was pretty much in bed.
I had given her some Max but she had hesitated for a bit because she has to be careful what she uses. Then one day she called, she had tried one squirt then a couple more and then full strength. Within a very short time we noticed she was perking up, she was hungry and get appetite was back, her breathing improved and she had some energy after weeks of none. The MAX was the only difference. What she is finding now is that her body is fighting on its own and at the first sign of anything she bumps it up a couple extra squirts. She is now a believer and is using it everyday.
